HYPER JAPAN Festival 2019 is very proud to welcome Clearspring to the HYPER Kitchen.
Clearspring’s HYPER Kitchen workshops will be hosted this year by two incredible chefs who will be preparing and demonstrating some fantastic Japanese food.
Jay Morjaria, a chef and food consultant who founded London’s first meat-free cooking school and has appeared on BBC2’s Million Pound Menu, will be hosting the Clearspring kitchen on Friday. Jay spent time in Japan and Korea learning more about East Asian cuisine before launching Dynasty, his Modern Asian brand.
Jay will be making some simple but delicious Japanese snacks – Tofu Katsu Sandwiches and Tamaki Rolls in the HYPER Kitchen.
On Saturday, Koj, a British-Japanese chef based in the Cotswolds will be your host for the Clearspring Kitchen. Koj reached the final of MasterChef in 2012 before training in Michelin starred kitchens across the UK and Europe and specialising in Japanese cuisine. He now has a unique ‘No sushi’ casual dining Japanese restaurant in Cheltenham and has cooked for many VIPs including HM The Queen.
In the HYPER Kitchen, Koj will be making his signature dish based on Nasu Dengaku, a Japanese aubergine dish.
