Miwa sake brewery / 株式会社三輪酒造 was founded in Gifu prefecture in 1837. It is located in Shirakawago, familiar as a UNESCO World Heritage Site. Each autumn in Shirakawago, the Doburoku festival is held.

    This "Shirakawago / 白川郷 | Junmai roughly filtered unpasteurized fresh sake", which closely resembles doburoku, was created over 40 years ago to be a sake capable of transmitting this tradition to the present. Because it was a unpasteurized sake, however, it could only be enjoyed in the cellar. Thanks to the development of unique techniques and advances in temperature management during shipping, the sprightly flavor, pure umami of rice, and pleasant mild carbonation can now be enjoyed together in the fresh richness of this newly created "Shirakawago / 白川郷 | Junmai roughly filtered unpasteurized fresh sake".
