    "Shinrai / 神雷 | Junmai-ginjo" is brewed using Hiroshima-grown Hattan-nishiki rice that has been polished to 55%. Shinrai ’s brewery is located 500 meters (about 1,640 feet) above sea level and is in Hiroshima prefecture’s finest cold district. With annual average temperatures similar to those of the northern part of the Tohoku region, this chilly climate and the soft-water brewing techniques passed down in Hiroshima allow the brewing of sake that is rich in the flavors of its rice and refreshing. It offers a low-key fragrance and, within the sharp flavor that is characteristic of Hattan-nishiki rice, it also presents a mild umami.
