Niidahonke sake brewery / 有限会社仁井田本家, established 300 years ago, takes as its creed the idea that sake is good for one’s health. Accordingly, all of this brewery’s sake is created from natural rice grown without fertilizers or pesticides, water from mountain springs and wells close to rice fields, and yeast made from natural rice.

    The autumn-maturing "Niida-shizensyu” brand, a best seller since its launch over 50 years ago, is a lush masterpiece featuring the sweetness and umami of rice. The new sake is pasteurized in early spring, stored in a tank, and passes the summer in the cellar; then, at a time when the outdoor temperature and the temperature inside the cellar is estimated to be approximately the same, the well-matured Niida-shizensyu is delivered as one time pasteurization before storage.
